Dear reader,
I hope this letter finds you well. I wanted to share with you a recent food discovery that has quickly become one of my go-to snackie meals: kimchi toast. I know it might sound a little strange, but trust me, it’s magic.
The recipe is super simple, with only four ingredients: bread, tahini, kimchi, and everything bagel seasoning. You start by toasting a slice of bread (I like to use sourdough) to your preferred level of crispiness. Then, spread a generous amount of tahini over the toast. Next, add a few spoonfuls of kimchi on top of the tahini. Finally, sprinkle on some everything bagel seasoning to add a bit of extra flavor and texture. In addition to everything bagel, I typically add a touch of flakey sea salt to bring it home.
The combination of these four ingredients might seem a little odd at first, but they somehow work together in perfect harmony. The tahini provides a creamy, nutty base that pairs well with the tangy, spicy kimchi. The everything bagel seasoning adds a nice crunch and savory flavor that ties everything together.
What I love most about this toast is that it’s so versatile. You can use any kind of bread you like (I’ve tried it with a bagels, flatbread, naan, rye), and you can adjust the amount of tahini and kimchi to your personal taste. Plus, it’s a great way to use up any leftover kimchi you might have in the fridge. If you’d like to make your own kimchi, this recipe by the Korean Vegan is absolutely the best.
If you’re a fan of Korean cuisine or just looking for a new breakfast or lunch idea, I highly recommend giving kimchi toast a try.
Until next time,
Bridget
