Coconut Citrus Toast

Take a ride on the sweeter toast side, complete with creamy yogurt, bright citrus and honey.

Ingredients

  • 2 slices rye bread, or any multigrain bread
  • 1 cup plant based vanilla yogurt Kite Hill, Harmless Harvest, Cocojune, Forager
  • 1 tablespoon chia seeds
  • 1 blood orange, peeled and sliced thinly
  • 1 grapefruit, peeled and sliced thinly
  • honey or agave
  • toasted coconut flakes, for garnishing

Instructions

  • Whisk together vanilla yogurt and chia seeds in a small bowl and set it aside.
  • Toast your bread, then add a generous layer of coconut yogurt to the base. Top each with orange and grapefruit slices, and a honey/agave drizzle. Garnish with a light sprinkle of coconut flakes.
