Vegan Sloppy Joes

For me, Sloppy Joes are extremely nostalgic. Growing up, this sandwich was consistently the first meal to hit the plate after a long road trip to my Grandmother’s for the holidays. As the weather begins to cool, I find myself craving warm soups, stews, and certainly hot sandwiches. This particular recipe uses Trader Joe’s Soyrizo and chopped, spiced walnuts as the meat substitute. Don’t forget the bread and butter pickles.

Vegan Sloppy Joes

A delicious, plant-based take on an American childhood classic. Still as good as when you were a kid.

Ingredients

For Sloppy Joe Mixture

  • 1 tbsp olive oil
  • 1 yellow or red onion diced
  • 1 red bell pepper diced
  • 1-2 jalapenos diced (seeds removed for reduced heat)
  • 1 tsp salt divided in half
  • ½ tube Trader Joe's Soyrizo
  • 1 cup walnuts chopped
  • tsp smoked paprika
  • 4 cloves garlic chopped
  • 1 can fire roasted tomatos
  • 2 tbsp coconut aminos or soy sauce
  • ¼ cup pumpkin vinegar
  • ½ cup water

For Serving

  • 6-8 slider sized buns
  • bread and butter pickles
  • 1 cup shredded cabbage or coleslaw mixture tossed in lime juice or vinegar, with a pinch of salt and/or cumin if desired

Instructions

  • Add the olive oil to a saute pan over medium-high heat, then add the chopped onion, the red bell pepper, the jalapenos and half of the salt. Cook until onions are soft and translucent.
  • Add the soyrizo and walnuts and continue cooking for 5 minutes.
  • Add garlic and smoked paprika. Cook until they are both fragrant stirring regularly. Should take about 30 seconds to 1 minute.
  • Next add the can of tomatoes. Sautee for one minute before adding the coconut aminos (or soy sauce), pumpkin vinegar ( or AC vinegar), water and the rest of the salt.
  • Bring everything to a boil, then reduce the heat to low, and allow the until it is your personal desired sloppy joe consistency, about 20 minutes or so.
  • Final step it to assemble the Sloppy Joes. Lightly toast your buns over an open flame, add the sliced pickles, followed by the sloppy joe filling and shredded cabbage. Serve immediately.
