Oli Popsicles

As solstice quickly approaches, I can’t help but think about the summer staple that has been part of my life for as long as I can remember – popsicles. Whatever stage of life you find yourself in, these icy cold freezer treats will hit the spot on any hot summer day. Popsicles have the power to transport us back in time, perhaps evoking those feelings of childlike joy or free spiritedness. They offer a refreshing burst of flavor that cools us down in hopes to beat the heat. These particular pops have benefits…brought to you by Olipop.

Oli Popsicles

Healthy meets delicious meets frozen treat.
Servings 10 popsicles
Prep Time 5 minutes
Freeze Time 4 hours
Total Time 4 hours 5 minutes

Equipment

  • 8-10 Popsicle molds

Ingredients

  • 2 cups Olipop Probiotic Soda
  • 1 cup full fat coconut milk
  • 2 tablespoons maple syrup, honey, or agave
  • Sliced fruit to garnish

Instructions

  • Distribute sliced fruit into the molds. Combine the Olipop soda, coconut milk, and sweetener of choice in pitcher or carafe and stir to combine. Pour the mixture into the popsicle molds, tapping on the counter to remove any air pockets.
  • Insert popsicle sticks and freeze until hard, at least 4 hours.
  • When ready to eat, run the mold under warm water for a few seconds to loosen, then remove the pops from the mold. Enjoy right away.
