Green Dream Sandwich

Dear reader,

Whether you’re picnicking with friends, lunching in the breakroom, or searching for a quick bite at home, here’s a new sandwich to add to your rotation. It is equally as unique as it is tasty. This Green Dream Sandwich is complete with creamy veganaise, fresh cucumber, herby pea and avocado mash, crunchy microgreens, tangy sauerkraut, and loads of savoury tahini. Plant based sandwich goals.

Green Dream Sandwich

Veganaise, cucumber, pea and avocado mash, microgreens, tangy sauerkraut, and loads of savoury tahini. Sandwich goals.
Servings 2 people
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 4 large slices of seedy or rye bread, toasted or any bread of your choosing
  • ¼ cup *veganaise
  • ½ cucumber, sliced into paper thin rounds
  • 1 cup frozen peas, thawed out in hot water for 4-5 minutes
  • ½ large avocado
  • ½ teaspoon salt
  • 2 tablespoons fresh dill and mint, destemmed and finely chopped
  • ½ lime juiced
  • ½ cup *sauerkraut
  • ½ cup *microgreens
  • ¼ cup *tahini

Instructions

Herby Pea and Avocado Mash

  • In a small bowl, combine pease, avocado, herbs, salt, and lime juice. Using a fork (or potato masher, if you have one) mash all ingredients together until most of the peas have been broken down, and the avocado is creamy. It should look and feel like a slightly chunky spread.

Sandwich

  • Spread a generous amount of veganaise on both sides of the sandwich bread.
  • Next, layer with cucumber slices, herby pea mash, 1-2 spoonfuls of sauerkraut, and microgreens.
  • Finally, drizzle a generous amount of tahini over the microgreens, top with the other half of the bread, and dig in.

Notes

*Ingredients to make your life easier:
  1. Veganaise: Found in nearly all grocery stores, in the refrigerated section (typically where all other vegan refrigerated products are located). 
  2. Sauerkraut: Sauerkraut is usually found in the pickle aisle of the grocery store. It’s usually next to other pickled or fermented foods, such as kimchi. Many stores have those items in the condiment aisle/section. 
  3. Microgreens: I have found them at Whole Foods, Kroger, and they’re always selling them at the local farmers markets. City Roots is the brand I use from Whole Foods!
  4. Tahini: In most grocery stores, tahini is either in the aisle with other condiments like peanut butter or in the aisle with international foods. You can also find it at a specialty or Middle Eastern grocery stores. It is sold shelf-stable in glass or plastic jars and is not refrigerated.

    Fantastic!!! The pea and avocado mash was a surprising combo that I found myself just eating spoonfuls of as I was spreading it on the sandwich. The brightness from the sauerkraut was a wonderful addition that made this a really addicting sandwich! 100% adding this into my weekly rotation because it’s so delicious and easy but filled with amazing flavor!! <3
