Vegan Greek Pizza Snacks

To be honest, this recipe began as an attempt to make a vegan whipped feta dip. The final product was short of success. So, when life throws you curveballs, make pizza. These Vegan Greek Pizza Snacks feature a tangy, salty feta “cheese” sauce as the base to this quick and easy finger food.

Vegan Greek Pizza Snacks

Single serve pizzas, Greek style. Using plant based feta and artichokes whipped together to create a creamy 'cheezy' base, topped with bright tomatoes, roasted red peppers, and fresh basil. Killer vegan party food, made in under ten minutes.

Equipment

  • Food Processor or Blender

Ingredients

Fo the Feta Cheeze Sauce

  • 3 cloves garlic, chopped
  • 1 tablespoon fresh rosemary, chopped
  • ½ teaspoon ground black pepper
  • ½ teaspoon chili flakes
  • 1 tablespoon lemon juice
  • 1 block vegan feta
  • oz jar of marinated artichokes

For the Toppings

  • 4-6 small pita rounds
  • 2 roma tomatoes, sliced into thin rounds
  • ½ cup roasted red pepper
  • ¼ cup fresh basil
  • Other topping ideas: Fresh cracked black pepper, olives, pickled onions or peppers, diced cucumbers, etc.

Instructions

  • Preheat the oven to 400 degrees.
  • Blend together all of feta cheeze sauce ingredients on high until smooth and creamy. Continue adding in the brine/marinade from the artichokes slowly, maybe one tablespoon at a time. The finished consistency should look similar to a chunky hummus.
  • Layer the cheeze sauce, the sliced tomatoes, the roasted red peppers, and the fresh basil on top of the pita.
  • Bake for ~7-10 minutes until the pizza bites are nice and toasty. Cool, slice, and serve it up!
