Coconut Butter Corn Sauce

This sauce is an ode to a traditional southern style creamed corn or corn butter, but dairy free. Prepared using simple ingredients like sauteed corn, coconut milk, turmeric, and simmered with jalapenos for a gentle heat. This sauce is silky, buttery, and easy to prepare. Serve it cool or warm over pasta, grains, or my personal favorite-vegetable pot stickers.

Dairy Free Coconut Butter Corn Sauce

Silky, buttery (but hold the butter) and so simple to prepare. Serve it cool or warm over pasta, grains, or my personal favorite-vegetable pot stickers.

Equipment

  • Medium-Large Skillet
  • Vitamix, or any high speed blender
  • Small Saucepan

Ingredients

  • 2 tablespoons avocado oil, or any neutral oil
  • 1 large white onion, medium dice
  • generous pinch of salt
  • 2 cups fresh corn, off the cob
  • 3 cloves garlic, minced
  • 1 cup water. plus more for thinning as needed
  • ¼ cup coconut milk
  • 1 teaspoon salt
  • ¼ teaspoon turmeric
  • ½ jalapeño pepper, sliced into rounds
  • generous pinch of ground black pepper

Instructions

  • First, add the oil to a hot pan and sauté the onion and the corn on medium-high heat with a generous pinch of salt for 3-4 minutes or until the onions become soft and translucent. Bump up the heat to high, and allow the onion and corn to brown a bit.
  • Turn the heat down to medium-low. Add the garlic and saute for an additional minute or so, until the garlic becomes quite fragrant. Remove the pan from the heat and set aside.
  • Next, blend the sautéd mix, water, coconut milk, salt and turmeric on high speed until the sauce is silky and smooth. It should be the consistency of milk at this point.
  • Finally, add the sauce to a small saucepan, with sliced jalapeno, a pinch of ground pepper, and (optional) fresh basil. Bring the sauce to a boil, then simmer on low heat for at least 5 minutes or so, or until the sauce is thickened to your liking.
  • Serve this silky, buttery, decadent sauce cool or warm over pasta, grains, or my personal favorite-vegetable pot stickers.
