Dear reader,
Forget the tall tales about homemade salad dressings taking too much time and effort. Perhaps there is a time and a place for store bought salad dressings, perhaps they are overpriced and overrated. I’ll let you make up your own mind. With that being said, this lemon tahini dressing takes less than 5 minutes to prepare, and calls for 5 ingredients. Fresh dill is key.
Try it with any Mediterranean-style salad, or drizzle it atop a Sweet Potato Kale Salad, or Vegan Chickpea Caesar Salad.
Until next time,
Bridget
Dilly Lemon Tahini Dressing
Ingredients
- ¼ cup smooth tahini I found that Soom brand works best for this dressing in particular.
- 2 tablespoons lemon juice
- ½ tablespoon extra virgin olive oil
- ½ teaspoon salt
- 2 tablespoons fresh dill, finely chopped
- ¼ cup walter, for thinning as needed.
Instructions
- Combine all of the dressing ingredients except the water in a medium bowl, and whisk until well incorporated.
- Add water slowly, while whisking, until the consistency is pourable, but still quite creamy.
- Serve over any salad. It pairs especially well with a mediterranean-style salad.
