Creamy Pistachio Smoothie

I knew this one was going to be a hit when I had trouble deciding whether to call it a milkshake or a smoothie. I went with smoothie for now, but the jury is still out. This creamy pistachio smoothie checks all the boxes for a breakfast or dessert: Creamy and sweet, protein packed, full of fiber, healthy fats, spices, and greens. Satisfy that sweet tooth and get your greens all in one sweet sip.

Pair it with this savory Vegan Crispy Potato and Egg Hash for a complete breakfast.

Creamy Pistachio Smoothie

Servings 2 people

Equipment

  • Vitamix, or any high speed blender

Ingredients

  • ½ cup cold water
  • ½ cup full fat coconut milk
  • 1 medjool date, pit removed
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • 1 serving vanilla protein powder
  • ¼ teaspoon almond extract
  • ¼ cup shelled pistachios
  • 1 ½ bananas, frozen
  • 2 packed cups fresh spinach
  • ¼ teaspoon salt

Instructions

  • Place all ingredients in a blender. Blend until smooth and creamy, stopping to scrape down the sides as necessary. If desired, garnish with a sprinkle of coconut flakes and chopped pistachios. Enjoy straight away.
